These maple syrups are sourced at the beginning and end of the annual maple syrup season harvest.
Golden delicate taste represents the first tapping of the season and has a lighter flavour and paler colour - perfect for drizzling over pancakes or for brunch.
Late harvest is from the end of the season; a much darker colour and fuller flavour making it ideal for glazing meats and vegetables or for desserts that demand a more robust flavour.
The annual maple season runs from February until April, the period known as "the sugar moon". In that time the maple trees are tapped and, as the sap rises, the liquid is collected and finds its way to the 'maple shack' to be boiled down into our award-winning maple syrup.
Our maple syrup comes only from the top 200 farms in the celebrated bas-Saint-Laurent region of Canada, where the higher concentration of maple sugar trees means the sap collected there is the finest in the country.
