A coarsely chopped olive tapenade with a delicious earthy flavour and a balanced peppery finish. This tapenade had a chunky texture which allows you to enjoy the flavour of each individual ingredient. Great as an appetiser, to mix with pasta or marinating meat & veg.

Spoon the tapenade into some large Portobello mushrooms
Grate some cheddar over the top
Bake in the oven until the cheese has turned golden
